I discovered these whole wheat flat breads, actually a Middle Eastern style of Lavash, at my local health food store and they make a great, quick compliment to soup or salad. To prepare I use a large flat iron skillet, brushed with a small amount of olive oil and resting on a flame diffuser to ensure even cooking without the burn. I then place the frozen bread on the skillet, drizzle with olive oil and add a handful of spinach or cooked kale and/or in this case a sprinkle of Daiya non-dairy cheese, a few tablespoons of chopped green onion, salt and pepper. I leave the many combinations to your imagination, although too much tomato sauce may overpower this thin bread. Heat the gas flame to medium high, cover with a tight lid and let the combination of hot iron below and moisture from above cook the most perfectly crisp crust this side of Naples, Italy.

1 Middle Eastern bakery Lavash
Olive oil
3 Green onions, chopped
1/4 cup Daiya non-dairy cheese or grated cheese of your choice
Salt and Pepper to taste
